The most common question I get from my clients is “What part of the cow is this cut from?” I admit, sometimes I don’t know.
Cuts have changed names so much over the years, I simply can’t keep up with what cuts are called now, and “my grandmaw used to call that a (fill in the blank. Cowboy steak, round-bone roast, etc. You name it, I’ve probably heard it.)
